Abstract

In this survey it was tried to identify the main intrinsic and extrinsic indicators used by the consumer, on shopping, in the assessment of the quality of three food categories: oranges, aromatic solid yoghurts and coffee bags (beans and ground).
Out of an exploratory practical case elaboration and the accomplished analysis of every product it was concluded that the perception and assessment of products qualities under survey are extremely variable. Bringing together different quality indicators, it was concluded, however, that consumers use essentially intrinsic variables. Nevertheless, when all products are compared (only considering the extrinsic and common attributes to every category), it was concluded that each product category is attached to different factors.
